Ingredients for Broccoli Cream Soup

  • 5 tablespoons of butter, divided
  • 1 chopped onion
  • 1 stalk of chopped celery
  • 3 cups of chicken broth
  • 8 cups of broccoli florets
  • 3 tablespoons of all-purpose flour
  • 2 cups of milk
  • Ground black pepper as per your taste

How to Make Broccoli Cream Soup

  1. First of all, melt 2 tablespoons of butter in the medium sized stock pot, and saute onion and celery until it tender. Add broccoli & broth, cover and simmer for 10-12 minutes.
  2. Now pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with the folded kitchen towel, and carefully start the blender by using a few quick pulses to get the soup moving before leaving it on to the puree.
  3. After that puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender & puree the soup right in the cooking pot.
  4. Now in small saucepan, over the medium-heat melt 3 tablespoons of butter, stir in flour & add milk. Stir until thick & bubbly, and add to the soup. Season with pepper and serve.
